Lemon & Blueberry Baked Oats

This recipe is very easy to do, and the oat will really fill you up until Lunch. For those on a diet, swap the Deluxe Vanilla yogurt for a fat free version and add some vanilla essence.

Ingredients

40g Oats

175g Ann Forshaw’s Deluxe Vanilla Yogurt

1/2 Lemon juice and zest

2 medium eggs (beaten)

50g Blueberries

1-2 tsp Sugar

Method

1. Preheat the oven at 180°C.

2. Add the oats, yogurt, lemon juice, eggs, sugar and 2/3 of the blueberries into a bowl and mix to combine.

3. Pour the mixture into an oven proof dish and sprinkle the rest of the blueberries on top.

4. Place on a baking tray and pop into the oven for 35-40 minutes, until risen.
